Pizza Pocket Waffles
1 pound Pizza dough, store bought, proofed according to package instructions
1/4 cup Marinara sauce, plus more for serving
1 cup Mozzarella cheese, grated
1/4 cup Parmigiano-Reggiano, grated
1/4 cup Mini pepperoni
1/4 cup Italian sausage, cooked, crumbles
1/4 cup Onions and peppers, cooked
Olive oil cooking spray, for greasing
Kosher salt, for sprinkling
Dried oregano, for sprinkling

Preheat a square waffle iron according to manufacturer’s instructions.

Cut the pizza dough into eight pieces. Roll four of the pieces into a circle, top each with a tablespoon or so of marinara sauce, ¼ cup mozzarella and 1 tablespoon parmesan plus any combination of pepperoni, sausage, and onions and peppers, leaving a ½-inch border at the edges.

Roll out the other four pieces of dough into circles. Top the pizzas and press the edges to seal. Grease the waffle iron with cooking spray and place one of the pizzas into the waffle iron. Sprinkle the top of the pizza pocket with salt and oregano. Close the waffle iron and allow to cook until golden brown, 6 minutes.

Remove from the waffle iron and allow to cool slightly. Serve hot with extra marinara sauce for dipping.
