With 2 kinds of cheese!
1/2 lb Sweet Italian sausage, removed from casing
1/2 lb Broccoli rabe, finely chopped
3 Garlic cloves, minced
Pinch of chili flakes
1 cup Shredded mozzarella cheese
1 Box of puff pastry (17.3 oz), thawed
All-purpose flour, for dusting
1 Large egg, beaten well
Dried oregano, for sprinkling
Flaky sea salt, for sprinkling
2 tbsp Grated parmigiano-reggiano
Kosher salt & fresh ground pepper, to taste
Marinara sauce, for serving
Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
Heat a large skillet over medium-high heat and add the olive oil. Add the sausage and cook, breaking up with the back of a wooden spoon, until small pieces form. Continue cooking until browned, about 7 minutes. Remove to a paper towel-lined plate. To the same skillet, add the broccoli rabe and continue cooking another 5 minutes or so, until softened.
Add the garlic and chili flakes during the last minute of cooking and season with salt and pepper. Remove to a bowl, adding the sausage back, and set aside to cool.
On a lightly floured surface, place a piece of puff pastry and roll until about an inch larger on all sides. Sprinkle evenly with half of the cheese and half of the sausage-broccoli mixture. Roll the long edge of the puff pastry into a log, like a jelly roll, then slice in half lengthwise, into two strips and set aside. Repeat with the remaining puff pastry, cheese, and sausage mixture.
Place a 4-inch in diameter oven-safe ramekin in the center of the parchment-lined baking sheet. Twist each piece of puff pastry lengthwise, then place in a spiral shape around the ramekin, one strip at a time, pinching to seal the pieces together. Brush the whole spiral with egg, sprinkle with parmigiano-reggiano, oregano, and flaky salt. Bake for 25 to 30 minutes until the puff pastry is puffed and deeply golden.
Remove from the oven, allow to cool for 5 minutes, then pour the marinara sauce into the warm ramekin and serve immediately.
