3 Garlic cloves, minced
1 tbsp Avocado oil, for greasing
1 lb Chicken thighs, boneless & skinless
1 lb Chicken breasts, boneless & skinless
1/2 cup Ketchup
2 tbsp Apple cider vinegar
2 tbsp Dark brown sugar
1 tsp Garlic powder
1 tsp Sweet paprika
1 tsp Onion powder
1 tsp Red pepper flakes
Potato slider buns, for serving
Kosher salt, to taste
Fresh ground black pepper, to taste
Pickled red onions
Dill pickle chips
Thinly sliced radishes
Shredded cheddar cheese
Thinly sliced scallions
Heat a large saute pan over medium heat with avocado oil. Add the onions and garlic and cook for 3 minutes until softened. Season with salt and pepper. Set aside to cool slightly, and then pour into a 6-quart slow cooker.
Add the chicken thighs and chicken breasts to the slow cooker. In a medium bowl, stir together the ketchup, apple cider vinegar, dark brown sugar, garlic powder, sweet paprika, onion powder, and red pepper flakes. Pour over the chicken and season with salt and pepper.
Put the lid on the slow cooker and cook on low for 6 to 8 hours, or on high for 4 hour. When the time is done, shred the chicken using two forks and stir to coat in the sauce. Keep the slow cooker on the "Keep Warm" setting throughout the party or dinner for easy serving!
