
1/4 cup Medium cheddar, grated
1/4 cup Havarti, grated
2 Slices Sourdough bread, pre-sliced
2 tablespoons Mayonnaise
Heat a medium skillet over medium heat.
Mix the 3 cheeses together. Sandwich the cheese blend between two slices of sourdough bread. Spread half the mayonnaise on the top slice edge-to-edge.
Place the sandwich mayo-side down in the skillet. Let the bottom get evenly golden brown and very crisp, about 4 to 5 minutes. While waiting, spread mayo on the other slice edge-to-edge as well.
When ready, flip the sandwich and lower the heat to medium-low. Cook until the other side gets evenly golden brown and very crisp as well and the cheese is fully melted, another 4 to 5 minutes.
Cut in half into triangles and enjoy.
