2 tablespoons Extra virgin olive oil
1 Small onion
2 cloves Garlic, minced
1 Jalapeno, minced
1 teaspoon Ground cumin
1/4 teaspoon Cayenne pepper
1-1 1/2 cups Whole milk
10 ounces American cheese, grated
6 ounces Pepper jack cheese
1 can Green chilies, 4-ounces
1 Ripe tomato, chopped
1/2 cup Cilantro, chopped, leaves and tender stems
Kosher salt, to taste
Freshly-cracked black pepper, to taste

Heat a medium saucepan over medium heat with olive oil. Add the onion, garlic and jalapeno and cook until softened, 3 to 5 minutes. Stir in the cumin and cayenne during the last minute of cooking.
Add the milk and allow to come to a simmer. Remove from the heat and add the cheese, slowly stirring until just combined and melted. Stir in the green chilies, tomato and cilantro. Season with salt and pepper.
Place the queso in a bowl and onto a large board.
Garnish the board with veggies and chips to serve.
