1/2 White onion, small, finely-diced
1/2 cup Roughly chopped cilantro, plus leaves for garnish
1 Jalapeno, finely chopped (for less heat, remove seeds)
1 Juice of 1 lime, plus more to taste
Kosher salt, to taste
3/4 cup Pomegranate arils
1/4 cup Crumbled queso fresco or cotija
Halve and pit the avocados. Scoop out the flesh with a spoon and add to a large bowl. Lightly mash the avocado with a fork or potato masher until chunky.
Add the onion, cilantro, jalapeno, lime juice, and salt to taste. Mix together. Taste and add more salt and/or lime juice, if needed.
Gently stir in 1/2 cup pomegranate arils. Transfer the guacamole to a serving bowl. Top with the remaining pomegranate arils, crumbled queso fresco or cotija, and cilantro leaves.
