Plant-Based Sliders With Caramelized Onions & Secret Sauce
Special Burger Sauce:
1/2 cup Mayonnaise
2 tablespoons Ketchup
1 tablespoon Yellow mustard
2 tablespoons Dill pickle relish
1-2 tablespoons Pickle juice
1 teaspoon Garlic powder
1 teaspoon Onion powder
1 tablespoon White wine vinegar
Hot sauce, to taste
1/4 cup Avocado oil, divided
1 Yellow onion, large, thinly sliced
1 teaspoon Garlic powder
12 ounces Plant-based ground beef
1 tablespoon Tamari
4 slices American cheese
4 Potato slider buns
Dill pickle chips, to serve
Kosher salt, to taste
Black pepper, freshly ground, to taste

For the special sauce, in a small bowl, stir together the mayonnaise, ketchup, mustard, pickle relish, 1 teaspoon garlic powder, onion powder, white wine vinegar and a couple dashes of hot sauce. Season with salt to taste and set aside.

For the burger, heat a large sauté pan over medium-high heat and add 2 tablespoons oil. Add the onions and allow to cook until golden and caramelized, 12 to 15 minutes, season with salt. Once finished cooking, remove to a plate and set aside.

Meanwhile, heat a large cast iron griddle or cast iron skillet over medium-high heat. Add the tamari and 1 teaspoon garlic powder to the meat and mix to combine.

Form the beef into four 1-inch thick slider patties and season very well all over with salt. Grease the hot griddle with a tablespoon or so of oil. Add the patties to the hot griddle and cook until medium-rare, 3 to 4 minutes per side.

Flip the burger patties and top with a piece of cheese. Turn the heat to medium and using a squeeze bottle filled with water, squeeze a bit of water down onto the griddle and top with a metal bowl–this is a trick to help melt the cheese.

Flip the bowl back over with tongs and the cheese should be nicely melted.

Meanwhile, split the buns and place cut side down onto the griddle, allow to toast for 30 seconds or so until golden.

Place the buns onto a plate, top the bottom bun with some sauce, the burger patty, caramelized onions, and additional pickles, if desired. Place the top bun on top and enjoy!
