6 graham crackers, crumbled
6 cups dark chocolate chips
1/4 cup sugar
pinch of salt
1 1/2 tbsp vanilla extract
1 container marshmallow bits
Heat the cream and 1/2 the graham crackers in a medium sauce pot over medium heat until it just comes to a simmer.
Place the chocolate chips, sugar, salt, and vanilla in a mixing bowl and set aside.
Strain the hot cream mixture over the chocolate and let sit for about 30 seconds. Stir the chocolate until a smooth and fudgy.
Cover the bowl with plastic and place in the fridge for 1 hour.
Remove the chocolate from the fridge and scoop out 1-inch balls onto a parchment lined baking sheet or baking dish. Place back in the fridge for 15 minutes.
Remove from the freezer and roll into balls with your hands and then cover with tiny marshmallows and the remaining graham cracker crumbs. Eat by themselves or stir into a glass of hot milk to make the perfect cup of hot chocolate!
