Perfect for brunch!
1/2 cup Sugar
1/2 cup Water
3/4 cup Mint leaves
For the Mimosa:
4 ounces Dry prosecco
1 ounce Fresh lemon juice
1 ounce Mint simple syrup
Make mint simple syrup: Bring sugar and water to a boil in a small saucepan, stirring to dissolve the sugar.
Stir in the mint leaves and remove from heat. Let steep for 15 minutes, then strain out the mint leaves and discard. Store syrup in the refrigerator for up to 1 week.
Add lemon juice and mint simple syrup to a wine glass. Fill with crushed ice.
Top with prosecco. Garnish with a lemon wheel and mint sprig.
