
2 tsp Tamari
1 tsp Toasted sesame oil
1/2 Garlic clove, minced
1 tsp Minced scallion, plus more for garnish
2 tbsp Diced ham
1/2 cup Frozen peas and carrots
2 Large eggs
Kosher salt, to taste
Sriracha, for serving
In a large microwave-safe mug, combine the rice, tamari, sesame oil, garlic, ginger, 1 teaspoon minced scallion, and ham. Cover with plastic wrap and pierce a couple of holes. Microwave for 1 minute.
Uncover, add peas and carrots and stir to combine. Return mug uncovered to microwave and cook for 30 seconds.
Then in a second mug, beat the eggs well and season with salt. Microwave on high for 1 to 2 minutes until the eggs are scrambled and cooked through.
Break the eggs into pieces and stir into the rice mixture. Garnish with sliced scallions and serve with sriracha.
