Microwave Carrot Cake Muffin With Raisins & Walnuts
1/2 cup All-purpose flour
2 tablespoons Light brown sugar
1/4 teaspoon Baking powder
1/4 teaspoon Kosher salt
1/4 teaspoon Ground cinnamon
1/4 cup Whole milk
2 tablespoons Unsalted butter, melted and cooled
1/2 teaspoon Vanilla extract
1 tablespoon Golden raisins
2 tablespoons Shredded carrots
2 tablespoons Rolled oats
2 tablespoons Chopped walnuts
For the glaze::
2 tablespoons Confectioners sugar
1-2 teaspoons Whole milk

In a microwave-safe mug, stir together the flour, brown sugar, baking powder, kosher salt, cinnamon, milk, butter and vanilla.

Fold in the golden raisins, carrot and oats. Sprinkle the top with walnuts.

Microwave the cake for 2 to 3 minutes until the cake is risen and cooked through.

Meanwhile, whisk together the confectioners’ sugar and milk until a smooth glaze forms.

Drizzle over muffin and serve.
