Escape the summer heat and whip up this ice cream recipe.
1/2 cup canned coconut milk
2 tbsp honey
juice and zest of 1 lime
2 tbsp spiced rum
Purée all ingredients in a blender until smooth. Pour into a (preferably metal) container and transfer to freezer.
Remove from freezer after about one hour and stir well, scraping the sides and bottom of container to bream up the ice crystals. Return container to the freezer and repeat this process a few times, until you have your desired consistency. You can also leave it overnight and then break the frozen purée into chunks and toss in the blender to process until soft serve consistency.
Serve immediately or refreeze until needed for a more solidly frozen treat.
