2 cups Panko bread crumbs
1 cup Grated parmigiana-reggiano cheese
2 tablespoons Flat leaf parsley
2 teaspoons Lemon zest
1/2 teaspoon Cayenne pepper
1 cup unsalted butter, melted (1 stick)
2 teaspoons Fresh lemon juice

In a medium bowl, combine the Panko, cheese, chives, parsley, zest, and cayenne. In a small bowl, stir together the butter and lemon juice, then stir the butter mixture into the breadcrumb mixture to combine.
Arrange the lobster meat in a 1.5-quart gratin or shallow baking dish. Cover with the breadcrumb mixture. Bake until bubbling, about 15 minutes. Increase the oven temperature to broil, then cook until the top is golden and crisp, 1–2 minutes.
Remove from the oven and let stand for 5 minutes, then sprinkle with additional chives. Serve warm with a lemon wedge on the side.
