Loaded Tater Tot Nachos

We call them... totchos!

Loaded Tater Tot Nachos
1 (32-ounce) Bag Frozen tater tots
2 tablespoons Extra-virgin olive oil
1 pound Ground chicken
2 cloves Garlic, minced
1 tablespoon Taco seasoning
1 teaspoon Ground cumin
1 (15-ounce) can Pinto beans, drained and rinsed
1 cup Shredded yellow cheddar cheese
1 cup Shredded pepper jack cheese
1/2 cup Guacamole, to serve
1/2 cup Sour cream, to serve
1/2 cup Pico de gallo
1/4 cup Pickled jalapenos, to serve
1/4 cup Cilantro leaves, to serve
3 Scallions, thinly sliced, to serve
Kosher salt and freshly ground black pepper, to taste

Preheat the oven to 425ºF.

Spread the tater tots evenly onto a baking sheet and bake for 25 to 30 minutes, or according to package instructions, until golden brown and crispy.

Meanwhile, heat a large saute pan with olive oil. Add the chicken and allow to cook for 2 minutes untouched to lightly brown. Then break the chicken into pieces using the back of a wooden spoon and continue cooking until browned and cooked through, another 5 to 7 minutes.

During the last minute of cooking add the garlic, taco seasoning, and cumin and stir to coat the chicken in the spices. Add the pinto beans and toss everything together to combine, season with salt and pepper.

Remove the tater tots from the oven and top with the chicken and bean mixture. Sprinkle with both cheeses and return to the oven for another 8 to 10 minutes until the cheese is melted and bubbling.

Top with guacamole, sour cream, pico de gallo, pickled jalapenos, cilantro and scallions. Serve immediately!
