For your chicken dinner night.
3 tablespoons Lemon pepper
2 teaspoons Black pepper, freshly ground
2 tablespoons Kosher salt
1 tablespoon Garlic powder
2 teaspoons Onion powder
2 teaspoons Smoked paprika
1/4-1/3 cup Extra virgin olive oil
6-8 Chicken thighs, bone-in skin-on
2 tablespoons Unsalted butter
3 cloves Garlic, minced
1/3 cup Honey
1/4 cup Water
1-2 tablespoons Soy sauce
1 Lemon, juiced
1 Lemon, sliced
In a medium bowl combine the lemon pepper, black pepper, salt, garlic powder, onion powder, smoked paprika and olive oil until a paste forms.
Rub the spice mixture underneath some of the skin of the thighs and on all sides of the chicken thighs. Place the thighs on a baking rack fitted inside a baking sheet and place in the refrigerator to marinate for 2 to 4 hours.
When ready to bake, remove the chicken from the fridge and allow to sit at room temperature for 20 minutes while preheating the oven to 400 degrees F. Bake the thighs for 30 minutes then flip the thighs and bake another 15 to 20 minutes until a meat thermometer registers 165 degrees F.
While the chicken is baking, prepare the sauce. In a medium saucepan, melt the butter over medium heat. Add the garlic and cook for a minute or so. Add the honey, water, soy sauce, lemon juice and sliced lemons. Bring to a simmer and allow to cook for 4 to 5 minutes until reduced and thickened.
When the thighs are finished cooking, remove from the oven. Brush the sauce over the cooked thighs and add the lemon slices to the top of the chicken thighs. Return to the oven for another 2 to 4 minutes until the sauce caramelizes or feel free to use your broiler, just watch carefully!
Remove from the oven and serve with the lemon slices.
