Healthy take on a classic!
2 Boneless, skinless chicken breasts, grilled
1 cup Hearts of romaine lettuce
1/3 cup Fresh grated parmesan cheese
2 tablespoon Pepitas
2 Seven-grain wraps
Avocado Kefir Caesar Dressing::
1/3 Avocado (about 1/3 cup cubed, or 50 grams)
1/2 cup Plain kefir
1/4 cup Shredded parmesan
1 tablespoon Olive oil
1 tablespoon Lemon juice
1/2 clove Garlic, minced
1/2 teaspoon Salt
1/2 teaspoon Freshly ground black pepper
Slice chicken breasts into 1 inch strips and set aside. Chop Romaine and add to large bowl.
Grate parmesan and then add to Romaine along with the pepitas.
Add 2 to 3 tablespoons of Avocado Kefir Caesar Dressing to the salad and toss lightly to combine.
Place half sliced chicken in center of one wrap and top with half the salad and roll up. Repeat with second wrap. Slice in half and serve.
For the Dressing:
In a medium sized bowl, mash avocado. Add kefir, parmesan, olive oil, lemon, garlic, salt, and pepper. Whisk until well combined. Refrigerate until served.
