A simple pasta for the no-frills family.
2 Large eggs
1/4 cup Parmesan cheese, grated, plus more for topping
4 Slices of turkey bacon, chopped
1 Small red onion, sliced
2 Garlic cloves, minced
Kocher salt and freshly ground black pepper, to taste
Bring a large pot of salted water to a boil.
Heat a large non-stick skillet over medium heat and add the chopped turkey bacon (no oil). Cook until lightly browned and starting to crisp up, about 3 minutes.
Add the onion, garlic, and a pinch of salt, and cook, stirring occasionally, until the onion is softened, about 5 minutes.
Add the spaghetti to the boiling water and cook according to package directions for al dente doneness.
Meanwhile, whisk the eggs, parmesan cheese, and a generous grinding of black pepper in a medium bowl
When the spaghetti is cooked, remove and keep about 1/2 cup of the pasta water and drain the pasta.
Whisk 1/4 cup of the pasta water gradually into the egg mixture, whisking continuously.
Add the pasta to the skillet of bacon and onions over medium-low heat. Pour the egg mixture into the skillet, stirring continuously, until the sauce is thickened but not scrambled, about 2 minutes.
If the skillet gets too hot, remove it from the heat. Add more pasta water if it’s too dry.
Serve in bowls topped with more parmesan and cracked black pepper.
