2 tsp Curry powder
1/2 tsp Garlic powder
1 tbsp Flour
2 cups Leftover grilled chicken, pepper, and onion fajitas
1 cup Canned and cubed pineapple (with juice)
1/8 tsp Red pepper flakes
Place a non-stick skillet over medium heat and add 2 tablespoons olive oil, 2 teaspoons curry powder, 1/2 teaspoon garlic powder, 1 tablespoon of flour. Stir to make a roux.
Add in the leftover fajita chicken (grilled chicken with peppers and onions) and toss to coat.
Add one cup canned pineapple with juice and stir to warm through.
Add a pinch of red pepper flakes and serve over rice.
