Jamika's Family Recipe Jamaican Banana Fritters
Vegetable oil, for deep frying
4 Overripe bananas
2 cups Flour
2 teaspoons Baking powder
1 teaspoon Salt
1/2 teaspoon Apple pie spice (cinnamon, nutmeg, allspice, cardamom)
1/2 cup Milk
2 Eggs
1/4 cup Granulated sugar, for dusting

Heat 2 to 3 inches of oil in a heavy-bottomed pot to 350 to 360 degrees F.

Peel the bananas and mash in a large bowl. Add the flour, baking powder, salt, apple pie spice, milk, and eggs; mix until well incorporated.

Using a medium (3/4 ounce) cookie scoop, first dip the scoop in the hot oil, then scoop some of the batter and gently add it to the oil. Fry in batches until the fritters are golden brown and float to the top, 2 to 4 minutes.

Remove from the oil and drain on paper towels. Immediately roll the hot fritters in sugar to coat on all sides and serve.
