Grilled Pizza With Figs & Arugula

Grilled Pizza With Figs & Arugula
1 package of store-bought pizza dough
2 tbsp flour, for dusting
1 tbsp olive oil
1 pint figs, halved
1/2 cup ricotta cheese
1 cup arugula
1 tbsp balsamic vinegar
1/4 cup toasted pine nuts
Kosher salt and black pepper, to taste

Lay the pizza dough in a bowl and cover it. Let the dough come to room temperature covered and then dust a cutting board or work surface with flour.

Heat the grill or grill pan to medium high heat. Roll out the dough onto a round the size of your grill pan or small enough to fit the inside of your grill.

Brush the dough with a little olive oil and put on the grill. Cook until you start to see bubbles on the top of the dough and there are nice grill marks on the bottom, about 3 minutes. Flip the pizza and cook through.

Remove from the pan and set aside. Dollop the ricotta over the cooked pizza crust. Arrange the figs and top with the pine nuts and arugula. Season with salt and lots of cracked black pepper and then drizzle with balsamic.
