Gail Simmons' No-Bake Chai-Spiced Cookies

This quick cookie recipe requires zero time in the oven.

Gail Simmons' No-Bake Chai-Spiced Cookies
1 cup whole oats, toasted
1 tsp cinnamon
1 tsp allspice
1 tsp ground ginger
1/2 tsp ground cardamom
3 tbsp vegetable oil
3 tbsp honey
1 cup almond flour
5 tbsp almond butter
1 tsp vanilla extract
1 cup powdered sugar

Combine all of the ingredients except for the powdered sugar into a large bowl and mix until combined.

Add 1 tablespoon of hot water, if necessary, to bind the mixture together.

Using a small ice cream scoop or a soup spoon, scoop balls of the mixture onto a parchment-lined baking sheet.

Place the cookies into the fridge to set for about 10 minutes.

Place the powdered sugar into a bowl and then toss each cookie into the powdered sugar to coat.

Serve in a mini muffin liner.
