Fresh Chimichurri Sauce for Steak
2 cups Fresh parsley leaves
2 tablespoons Fresh oregano leaves
3 Garlic cloves, chopped
1 small fresno chile, seeds removed, chopped
3 tablespoons Red wine vinegar
1/2 cup Extra-virgin olive oil
Kosher salt
Freshly ground black pepper

Combine the parsley, oregano, garlic, Fresno chile, red wine vinegar, two big pinches of salt and a few grinds of pepper in a food processor. Pulse until chopped.

Scrape into a bowl and stir in the olive oil. Taste and season with more salt and pepper, as needed.

Allow it to sit for 20 to 30 minutes for the flavors to meld together.

Yield 1 cup
