Tartiflette, a french word from the best ingredient: potato
1/2 pound Thick cut bacon, cut into cubes
2 Shallots, diced
1/4 teaspoon Nutmeg, grated
1 tablespoon Fresh thyme leaves, plus additional to serve
1/4 cup Dry white wine
1/2 cup Heavy cream
10 ounces Camembert, sliced 1/2-inch thick
Kosher salt and freshly ground black pepper, to taste
Preheat the oven to 425ºF. Place the potatoes in a pot of cold salted water and bring to a boil, allow to boil for 10 to 15 minutes until they are just tender but not too tender. Drain the potatoes and allow to cool.
Place the bacon into a large cast-iron skillet that’s cold then place the pot over medium-high heat. Allow to cook for 7 to 9 minutes until golden brown and crispy. Remove to a paper towel-lined plate and drain all but 2 tablespoons bacon fat from the pan.
To the bacon fat, add the shallot and garlic and allow to cook until softened, 2 to 3 minutes. Add the thyme leaves and nutmeg, season with salt and pepper and cook another minute.
Deglaze the pan with white wine, scraping any of the browned bits up off the bottom of the pan. Remove from the heat and set aside.
When the potatoes are cooled, slice them into ½-inch thick slices. Lay the potatoes into the bottom of a 2 ½ to 3-quart. Season with salt and pepper, top with half of the onion mixture as well as bacon. Repeat with remaining potatoes, onion, and bacon. Drizzle the cream over the top of the potatoes and top with the slices of camembert in a single layer.
Bake until bubbling and the cheese is melted and golden, 10 to 12 minutes, broiling the last minute or so if desired. Remove from the oven and allow to rest for 5 to 10 minutes. Garnish with more fresh thyme leaves and serve.
