Brine the Chicken in Buttermilk Overnight

Buttermilk is a slightly acidic version of regular milk. Any acidic marinade -- whether it's Buttermilk, pickle juice, vinegar -- has a lot of salt in it. And as the chicken sits in a brine, the salt dissolves proteins in the meat's muscle structure, loosening it and allowing it to retain more moisture as it cooks. Brined chicken loses 30-40% less moisture than un-brined chicken. So this will keep your fried chicken nice and tender.
