Warm Falafel Waffle With Lemon Yogurt

Warm Falafel Waffle With Lemon Yogurt
1 Can of chickpeas, drained and rinsed
3 tablespoons Minced red onion
1 Clove of garlic, minced
3 tablespoon Lemon juice
1 tablespoon Lemon zest
2 tablespoons Tahini
1 teaspoon Cumin
1 teaspoon Paprika
1 teaspoon Coriander
1/2 teaspoon Baking powder
2 tablespoons Chickpea flour
Kosher salt, to taste
Black pepper, to taste
1/2 cup Parsley, chopped
1 Egg
Tomato Salad:
1 cup Sliced cherry tomatoes
1/2 cup Sliced cucumbers
1/4 cup Sliced red onion
1/4 cup Parsley
1/4 cup Mint leaves
2 tablespoons Olive oil
1 Tablespoon Red wine vinegar
Lemon Yogurt:
Juice of 1 lemon
1/2 cup Greek yogurt

Preheat your waffle maker and turn to high heat. Coat with cooking spray if needed.

Place the chickpeas into the bowl of a food processor along with the rest of the ingredients for the falafel mixture. Pulse to combine until well mixed but not totally smooth. Set aside.

Combine the tomato salad ingredients in a separate bowl and set aside.

Combine the lemon yogurt ingredients and set aside.

Using a 2-ounce cookie scoop, or a 1/4-cup measuring cup, pour the falafel mixture into the waffle maker. Cook until nicely brown.

Place two waffles onto each plate and top with the tomato salad and the yogurt.
