Countess Luann's Eggs à la Française
2 to 3 Large eggs
Splash of water
Salt and pepper to taste
1 tablespoon Unsalted butter
Suggested toppings: warm tomato sauce, freshly grated parmesan cheese, pesto, truffle oil

Beat the eggs in a bowl with a whisk until evenly blended. Add a splash of water and salt and pepper to taste. Beat again briefly until lightly frothy.

Melt the butter in a small saucepan over medium-low heat. Pour in the beaten eggs.

Stir constantly with a wooden spoon until the eggs are creamy like mashed potatoes and still a little moist, 3 to 5 minutes.

Transfer to a plate and add desired toppings.
