
1 Eggplant
2 tbsp Olive oil
2 tbsp Soy sauce
1 tsp Maple syrup
1 tsp Smoked paprika
Kosher salt (to taste)

Preheat oven to 300°F.
Line two baking sheets with parchment paper.
Cut 1 eggplant in quarters, lengthwise. Slice each quarter into long, very thin strips.
In a small bowl, whisk together 2 tablespoons olive oil, 2 tablespoons soy sauce, 1 teaspoon maple syrup, 1 teaspoon smoked paprika.
Place eggplant slices onto baking sheets and brush both sides with sauce. Season with pepper.
Bake until eggplant is cooked through and beginning to get crisp, 45-50 minutes. Season with salt when the eggplant comes out of the oven.
