Dwayne Johnson's Cheat Day Coconut Banana Pancakes
2 cups All-purpose flour
3 tsp Baking powder
3 tbsp Cane sugar
1/2 tsp Sea salt
10 tbsp Unsweetened shredded coconut
2 Medium bananas, diced small
2 Large eggs
1 cup Coconut water
1 cup Coconut milk
3/4 cup Whole milk
1 tsp Vanilla extract
2 tbsp Coconut oil, melted
2 tbsp Unsalted butter, melted (plus more for greasing)
Olive oil spray, for greasing
Your favorite pancake toppings

Sift the flour and baking powder into a large bowl. Add the sugar, salt and shredded coconut and mix to combine.

In a separate medium bowl, whisk the eggs, coconut water, coconut milk, whole milk, vanilla extract, coconut oil and butter until combined.

Make a well in the center of the flour mixture and add the egg mixture. Mix gently to combine, leaving the batter lumpy.

Add the bananas to the batter and gently incorporate. Be careful not to over-mix the batter here. You want lumps!

Grease a nonstick pan or griddle with a mixture of melted butter and olive oil spray. Heat to 275 degrees F. You can also use a nonstick pan over medium heat.

Ladle 1 cup of batter onto the pan for a larger pancake, or ¼ cup batter for a small pancake.

Cook until the tops of the pancakes bubble — about 2 to 3 minutes. Flip and cook another 2 to 3 minutes on the other side, until golden brown. Add more cooking spray or butter if needed.

Serve with your favorite toppings!
