1 cup salt
1 cup brown sugar
1/2 tbsp black peppercorns
1 tsp juniper berries
1 head of garlic, halved across the equator
1/2 bunch thyme or rosemary
3 bay leaves
2 quarts ice
cold water to cover
12-15 lb turkey, thawed
Place the water, salt, and sugar into a large sauce pot and bring to a simmer. Dissolve the sugar and salt and then remove from the heat.
Pour water mixture into a large 4-5 gallon bucket or large stock pot.
Add the black peppercorns, juniper berries, garlic, herbs, and bay leaves. Stir to combine and add the ice to quickly cool the hot brine.
Once the mixture is at room temperature, add the turkey. Place a plate over the top of the turkey to weigh it down so that it stays submerged.
Place in the refrigerator overnight and cook turkey the next morning.
