Daphne's Olive Oil Cake With Lime & Cardamom

This cake brings a whole new meaning to what dessert can be!

Daphne's Olive Oil Cake With Lime & Cardamom
Softened unsalted butter, for greasing
2 Large eggs, plus 1 egg yolk
1 cup Good quality extra-virgin olive oil
1/4 cup Whole milk
1 1/2 cups Granulated sugar
1/2 cup Fortified wine, such as dry marsala
1 1/2 cups All-purpose flour
1/2 teaspoon Baking powder
1/4 teaspoon Baking soda
1/2 teaspoon Ground cardamom
1 1/2 teaspoons Kosher salt
1 Whole lime, zested
Honey, for drizzling
Flaky sea salt, to garnish

Preheat the oven to 325ºF.

Butter a 9-inch cake pan and line with parchment paper.

In a large bowl, whisk together the eggs, egg yolk, sugar in a large mixing bowl then gradually add in the olive oil, milk and dry marsala.

Using a fine-mesh sieve, sift the flour, cardamom, baking powder, baking soda, and kosher salt over the wet ingredients and stir to combine.

Stir in the lime zest until just combined.

Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until an inserted toothpick comes out clean.

Allow to cool in the pan on a rack for 25 to 30 minutes. Drizzle over the honey when the cake is still warm and sprinkle with flaky sea salt.

Remove the cake from the pan, slice and serve.
