
3 tbsp unsweetened cocoa powder
3 tbsp smoked paprika
1 tbsp ancho chili powder
1 tbsp cumin
1/4 cup brown sugar
Kosher salt and cracked black pepper (to taste)
1 tbsp olive oil
3 tbsp roughly chopped parsley (optional)
coarse salt for garnish
Take the steaks out of the fridge 20 minutes before cooking.
Place all of the spices into a small bowl and season with salt and pepper. Stir to combine rub about 4 tbsp the spices all over the steak.
Preheat a grill or grill pan to medium-high heat and place the steaks on the grill. Cook for 2 to 4 minutes per side for medium rare. Remove to a cutting board and let rest for about 5 minutes loosely covered with foil.
Slice the steak against the grain and drizzle with a little olive oil. Finish with coarse salt and some chopped parsley.
