1 1/4 teaspoons Kosher salt
3/4 teaspoon Baking soda
1 1/4 sticks Unsalted butter, melted and cooled to room temperature
1 cup Dark brown sugar
1/4 cup Granulated sugar
1 Egg, large
2 Egg yolks
2 teaspoons Vanilla extract
7 ounces Bittersweet chocolate, roughly chopped
Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
Whisk the flour, salt, and baking soda in a small bowl and set aside.
Place the butter, brown sugar, and granulated sugar into a large bowl; whisk until there are no lumps. Add the egg and egg yolks and whisk until the sugar dissolves and the mixture is smooth, about 30 seconds. Whisk in the vanilla.
Fold in the dry ingredients with a spatula and then stir in the chocolate. Let the batter sit for 5 minutes if it seems a little loose.
Scoop the cookies onto the parchment-lined baking sheets with a 1 1/2 ounce scoop, spacing them about 3 inches apart. Place the cookies into the fridge for about 5 minutes to set and then right into the oven.
Bake for 4 to 5 minutes and then rotate the pan. Bake for another 5 to 6 minutes until the cookies are golden brown and firm around the edges. Remove from the oven and tap the sheet pan against the counter or stove top.
Set aside to cool on the baking sheet.
