This recipe is sure to be a dinner staple in your household.
kosher salt and freshly ground pepper ( to taste )
1/2 cup flour
2 tbsp olive oil
3 tbsp butter
2 tbsp capers
splash of white wine
juice of 2 lemons
Heat a large non-stick skillet over medium high heat. Season the chicken with salt and pepper.
Place the flour into a baking dish and dredge the chicken, shaking off any excess flour.
Add the olive oil and 1 tablespoon of the butter to the pan to melt.
When hot, add the chicken and cook until golden brown on each side and cooked through, about 3 minutes per side.
Remove the chicken from the pan and add the capers and the white wine and cook for 1 minute.
Squeeze in the lemon juice and stir in the remaining butter.
Add the chicken pieces back to the pan and coat with the sauce.
Place the chicken on a platter and pour over any remaining sauce.
