Cheesy Low-Carb Pizza Chaffles

Cheesy Low-Carb Pizza Chaffles
2 Large Eggs
1 cup Mozzarella cheese, shredded
1/4 cup Almond flour
1/4 cup Grated parmesan
1/4 teaspoons Garlic powder
Cooking spray
For toppings:
1/2 cup Store-bought low-carb marinara sauce
1/2 cup Mozzarella cheese
12 Pepperoni slices, for topping
Dried oregano, for topping
Crush red pepper, for topping

Preheat a mini round waffle maker.

Whisk the eggs in a medium bowl. Add the mozzarella, almond flour, parmesan, and garlic powder, and stir to combine.

Lightly spray the inside of the waffle maker. Evenly spread about 1/4 of the batter in the waffle maker.

Close and cook until very crisp and browned, it should take about 3 minutes, depending on your waffle maker.

Remove and let cool on a rack set in a baking sheet. Repeat with the remaining batter.

Preheat your oven broiler.

Spread the marinara sauce on top of the chaffles, then sprinkle with mozzarella. Top with pepperoni.

Broil until melted and lightly browned on top, about 1 minute. Sprinkle with dried oregano and crushed red pepper.
