
4 Kosher, organic all-beef hot dogs
2-3 American cheese slices, cut into 1/2-inch strips
4 Pretzel hot dog buns, toasted to serve
Yellow mustard, to serve
Dill relish, to serve
Preheat the oven to 400ºF, and place a baking rack inside a baking sheet.
Begin by par-cooking the bacon. Place the bacon in a cold, large skillet and place over medium heat. Allow the bacon to par-cook, about 2 to 3 minutes per side, until lightly golden but still fairly limp. Remove to a paper towel-lined plate and allow to cool.
Slice the hot dogs lengthwise ⅔ down the length of the hot dog. Stuff the hot dogs with a couple of strips of American cheese.
Wrap 2 pieces of bacon around each hot dog, securing with two or three toothpicks. Place on the baking rack and bake for 8 to 10 minutes until bacon has crisped and cheese is melted through.
Serve on a toasted pretzel hot dog bun and top with mustard and dill relish.
