2 cups Rotisserie chicken, shredded
1/2 cup Buffalo hot sauce
1/4 cup Sliced scallions
1/2 cup Shredded white cheddar
1/2 cup Shredded pepper Jack
1/4 cup Mayo
8 Slices of sourdough bread
Heat the butter in a large skillet over medium heat until melted. Add the hot sauce and mix to combine. Add the rotisserie chicken and scallions and stir to warm through and coat nicely.
Spread a thin layer of mayonnaise on one side of each piece of sourdough bread. With the mayonnaise side facing outwards, evenly spread shredded white cheddar, top with some of the chicken mixture, top with pepper Jack then the second slice of bread with the mayonnaise facing outwards. Repeat with remaining sandwiches.
Heat a large griddle or nonstick saute pan over medium heat, add the sandwiches and cover with a lid. Allow to cook for 2 to 4 minutes per side until golden brown, flipping halfway through. Cook the sandwiches in batches. Allow the grilled cheese to rest for 5 minutes then slice in half and serve.
