1 cup Water
4 Large eggs, room temperature
1 ounce Almond extract
1 cup Pistachios, chopped
3 Drops of food green coloring
Preheat the oven to 350 degrees F. Grease three 6-inch rounds with nonstick cooking spray and line the bottom of the pans with parchment rounds. Grease the parchment paper with cooking spray.
In the bowl of a stand mixer fitted with the paddle attachment, add the cake mix, water, and oil and mix on low speed until combined. Add one egg at a time, mixing well to combine.
Add the almond extract and nuts and mix at medium speed for about 2 minutes. Divide the batter evenly among the cake pans. Bake for 20 to 25 minutes or until an inserted toothpick comes out clean.
Cool the cakes in the pan completely before removing from the pan. Stack and ice the cakes as desired.
