Blood Orange Ginger Fizz
Rosemary Ginger Simple Syrup:
1 cup Granulated sugar
1 cup Water
1 Fresh rosemary sprig
1 Piece of ginger, peeled and sliced
Mocktail:
1 cup Blood orange juice
2 cups Ginger beer
4 ounces Rosemary Ginger Simple Syrup
Club soda, for topping
Blood orange wheels, to garnish
Fresh rosemary sprigs, to garnish
Ice, to serve

For the Rosemary Ginger Simple Syrup

Add the sugar, water, rosemary and ginger to a small saucepan and place over medium heat.

Bring to a simmer and allow to simmer until the sugar dissolves, 3 to 5 minutes. Remove from the heat and allow to cool completely.

Refrigerate until chilled and when ready to serve, strain out the rosemary and ginger pieces.

For the Mocktail

In a Collins glass filled with ice, add ¼ cup blood orange juice and 1 ounce simple syrup and stir to combine.

Top with the ½ cup ginger beer and club soda and garnish with rosemary sprig and a blood orange wheel. Serve.
