Easy Blender Creme Brulee

A complex dish made simple!

1 3/4 cups Heavy whipping cream
4 Large egg yolks
1/4 cup + 1 tablespoon Granulated sugar
2 teaspoons Vanilla extract
Pinch Ground nutmeg
Pinch Kosher salt
Fresh berries, for serving
Chocolate shavings, for serving
6 Ramekins, 6 oz each
Hot water, for baking

Preheat the oven to 300ºF. Place the cream in a saucepan on the stove and bring to a simmer. Grease the ramekins with cooking spray and place them together in a large, deep baking dish or roasting pan.

Place the egg yolks and sugar into the carafe of a blender and blend until smooth on low speed.

With the blender is running on low, slowly stream in the cream — the mixture should thicken and become more light and fluffy.

Add the vanilla, nutmeg, and salt and blend quickly again. Strain through a fine-mesh sieve evenly into each ramekin.

Pour hot water into the baking dish around the ramekins — until the water is the same level as the custard in the ramekin.

Bake for 40 to 45 minutes or until set with a slight jiggle. Remove the dish from the oven and use tongs to remove each ramekin to a wire rack.

Allow to cool at room temperature for an hour or so, and then transfer to the refrigerator.

When ready to serve, sprinkle the top of each ramekin with sugar and use a brulee torch to burn the sugar until golden brown and a little crunchy – don’t place the flame too close so the sugar doesn’t burn.

Pro Tip:If you don’t have a torch for the brulee topping, you can use your broiler and cook until golden brown.

Serve immediately with berries or chocolate shavings.
