Carla Hall's Black Eyed Pea Salad

With hot sauce vinaigrette!

Carla Hall's Black Eyed Pea Salad
1 Can of black eyed peas (15 oz), drained and rinsed
1/2 English cucumber, skin on, diced 1/4"
1/2 Small sweet white onion, finely chopped
1 pt Grape tomatoes, halved
1 Orange sweet pepper, small diced
1 Garlic clove, minced
1 Sprig of fresh thyme, leaves only
1/2 tsp Chile flakes
1/2 cup Finely cut chives
1/2 to 1 tsp Salt
Hot Sauce Vinaigrette:
1/4 cup Hot sauce
2 tbsp Apple cider vinegar
1 tbsp Honey
1 1/2 tsp Yellow mustard
1 Garlic clove, minced
1/2 cup Canola or vegetable oil
Salt & pepper, to taste

Prepare the Hot Sauce Vinaigrette: Put all ingredients in a jar and shake to combine.

In a large bowl, combine the black-eyed peas, cucumbers, onions, tomatoes, garlic, thyme, chili flakes and chives. Toss to combine. Start by adding ½ cup vinaigrette, and gently stir to combine. Add more vinaigrette, if desired. S&P to taste.
