A high quality dish for the simple family.
2 tablespoons Extra-virgin olive oil
1/2 pound Ground turkey
1 small Yellow onion, diced
2 cloves Garlic, minced
1 tablespoon Tomato paste
1/2 teaspoon Crushed red chili flakes
1 Jar (32 oz) of low-sugar tomato sauce
1/2 cup Packed fresh basil leaves, plus additional to garnish
2 cups Part-skim mozzarella cheese, grated
1 cup Parmesan cheese, grated
Adjust the rack to the top third of the oven and preheat the broiler.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions.
Meanwhile, heat a large skillet over medium-high heat with olive oil. Add the turkey and allow to cook until browned, 5 to 6 minutes. Season with salt and pepper.
Add the onion, garlic, tomato paste, and chili flakes and cook another minute or so. Lastly, add the tomato sauce and bring to a simmer. Gently stir in the basil leaves and season with salt and pepper.
Stir in the tortellini and evenly spread the filling in the skillet. Sprinkle the mozzarella and parmesan cheese over the top and place it into the oven.
Allow to broil for 3 to 5 minutes until cheese is golden, melted, and bubbly, (watch carefully as all broilers differ and you don’t want to burn!).
Remove from the oven, allow to cool for 5 to 10 minutes then garnish with fresh basil.
