​Crispy Air Fryer Orange Chicken​
For the chicken::
1 pound Boneless chicken thighs, cut into 1 1/4 to 1 1/2 inches pieces
1 tablespoon Water
1 tablespoon All-purpose flour
1 tablespoon Cornstarch
1/4 teaspoon Baking powder
1/2 teaspoon Kosher salt
1 tablespoon Vegetable oil
For the sauce::
1 tablespoon Vegetable oil
3 cloves Finely grated fresh ginger
1 teaspoon Finely grated fresh ginger
1/2 cup Orange juice
1 tablespoon Soy sauce
1 tablespoon Oyster sauce
2 tablespoon Granulated sugar
1/4 cup Rice vinegar
1/2 teaspoon Toasted sesame oil
1/2 teaspoon Chile flakes
1 tablespoon Cornstarch
Sliced scallions and oranges, for garnish
Hot rice, for serving

Combine the chicken, water, flour, cornstarch, baking powder, and salt in a medium bowl. Mix well until evenly coated and there are no longer any dry or floury bits. Stir in the vegetable oil to coat. Let sit for 20 minutes.

Preheat an air fryer to 400 F.

Spread out half the chicken in one layer and cook until crispy on the outside and cooked through inside, about 12 minutes, opening the basket and flipping the pieces halfway through.

Transfer to a plate and repeat with the remaining chicken.

Meanwhile, make the sauce: Stir the cornstarch with 1 tablespoon cold water in a small bowl and set aside.

Heat the oil in a large skillet over medium heat. Add the garlic and ginger, and stir until fragrant, about 1 minute.

Pour in the orange juice, soy sauce, oyster sauce, sugar, vinegar, sesame oil, and chile flakes. Bring to a simmer.

Simmer for about a minute for the flavors to come together. Remove from heat until the chicken is ready.

When all the chicken is cooked, bring the sauce back up to a simmer. Give the cornstarch mixture another stir and add to the skillet.

Simmer until the sauce is thickened, about a minute, then add the chicken. Toss together until all the chicken pieces are thickly coated.

Transfer to a platter and garnish with scallions and orange slices. Serve with rice.
